Birria Chicken Tacos

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 3/4 pound Ground chicken
  • 1 packet Taco seasoning
  • 1 cup Water or more if needed
  • 1/2 cup Mexican cheese blend Shredded
  • 12 Soft taco shells depending on size use less if needed
  • 4 tsp Sour cream
  • 1 tbsp Fresh cilantro garnish

Instructions

  • Heat a non-stick pan over medium heat. Once hot, add half of the oil. Brown the ground chicken with the taco seasoning, breaking it up into smaller pieces until no longer pink. Add the water. Bring to a low simmer to allow the flavor to build. Taste and adjust the seasoning as needed.
  • Strain the liquid in the pan into a bowl. Return the pan to heat and add in the cheese. Stir until melted. Then set the meat in a bowl.
  • Dip the taco shells into the liquid on both sides. Spoon the chicken into the taco shells and fold in half. Reserve the liquid for dipping.
  • Heat a non-stick pan on medium heat. Once hot, add the remaining oil, as needed. Cook the tacos on both sides until browned.
  • Serve with dipping liquid, sour cream, and garnish with cilantro.
