Ingredients
- 8 oz Ground beef
- 1.5 tbsp Taco seasoning or make your own homemade taco seasoning blend (see notes below)
- 3 tbsp Water
- 6 Taco shells
- 1/2 cup Cheddar cheese Shredded
- 2 tsp Sour cream optional
Corn Salsa
- 1/2 cup Corn
- 1/4 cup Tomato
- 1 tbsp Red onion minced
- 2 tsp Fresh cilantro chopped
- 1 tsp Lime juice
- 1 tbsp Extra-virgin olive oil
Instructions
- In a bowl mix all the ingredients for the corn salsa in a bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
- Heat a non-stick pan over medium heat. Once hot, crumble in the beef and brown well while breaking it up into smaller pieces until no longer pink. Stir in the taco seasoning until fully combined. Stir in the water and bring to a simmer until most of the water evaporates. Season with salt if needed.
- Meanwhile, warm the taco shells as directed on the package.
- Spoon the ground beef into the taco shells, top with cheese, and corn salsa. Serve with sour cream.
Notes
Make your own Taco Seasoning - Mix all ingredients together in a bowl (use what you need in the recipe to taste, save the rest in a sealed container for future use)

- 1/2 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon oregano
- 1/4 teaspoon of cajun seasoning
- 1/4 teaspoon salt
