Ingredients
- 1/4 Red onion diced
- 3 cloves garlic minced
- 1 pound Ground beef
- 2 tsp Ground cumin
- 1 tsp Chili powder
- 4 oz Cheddar cheese shredded
- 8 Flour tortillas 6 inch
- 2 tbsp Fresh cilantro chopped
- 1 tomato diced
Avocado Crema
- 1 Avocados pitted and scooped out
- 1/4 cup Sour cream
- 2 tbsp Lime juice
- 1 tsp Fresh cilantro
Instructions
- Preheat the oven to 400 degrees.
- Heat a large pot over medium heat. Add the ground beef and brown, crumbling it with a spatula for 4 -5 minutes. Add in the onion along with a pinch of salt and pepper. Cook, stirring frequently for 3-4 minutes.
- Add garlic and cook for another minute, stirring frequently.
- Once the beef is cooked through, add cumin, chili powder and a splash of water.
- Stir to combine and season to taste with salt and pepper. Add the cheese and stir to combine and remove from the heat.
- Assemble your flautas by spreading the meat mixture in a line down the middle of each tortilla.
- Roll the tortilla tightly around the filling. Stick a toothpick through the tortilla to secure it closed.
- Place the flautas on a foil lined baking sheet and cook in the oven for 8 - 10 minutes or until tortillas are crispy. **Remove the toothpicks before serving** Garnish with diced tomato, chopped cilantro, and avocado crema.
Avocado Crema
- While the flautas are baking, place all of the ingredients in a food processor or blender and pulse until smooth. Drizzle over top of the flautas to serve.
