Beef Flauta's

w/ Avocado Crema

Ingredients

  • 1/4 Red onion diced
  • 3 cloves garlic minced
  • 1 pound Ground beef
  • 2 tsp Ground cumin
  • 1 tsp Chili powder
  • 4 oz Cheddar cheese shredded
  • 8 Flour tortillas 6 inch
  • 2 tbsp Fresh cilantro chopped
  • 1 tomato diced

Avocado Crema

  • 1 Avocados pitted and scooped out
  • 1/4 cup Sour cream
  • 2 tbsp Lime juice
  • 1 tsp Fresh cilantro

Instructions

  • Preheat the oven to 400 degrees.
  • Heat a large pot over medium heat. Add the ground beef and brown, crumbling it with a spatula for 4 -5 minutes. Add in the onion along with a pinch of salt and pepper. Cook, stirring frequently for 3-4 minutes.
  • Add garlic and cook for another minute, stirring frequently.
  • Once the beef is cooked through, add cumin, chili powder and a splash of water.
  • Stir to combine and season to taste with salt and pepper. Add the cheese and stir to combine and remove from the heat.
  • Assemble your flautas by spreading the meat mixture in a line down the middle of each tortilla.
  • Roll the tortilla tightly around the filling. Stick a toothpick through the tortilla to secure it closed.
  • Place the flautas on a foil lined baking sheet and cook in the oven for 8 - 10 minutes or until tortillas are crispy. **Remove the toothpicks before serving** Garnish with diced tomato, chopped cilantro, and avocado crema.

Avocado Crema

  • While the flautas are baking, place all of the ingredients in a food processor or blender and pulse until smooth. Drizzle over top of the flautas to serve.
