Ingredients

  • 2 tsp Extra-virgin olive oil plus more for finishing
  • 1 tbsp Red onion minced
  • 2 oz Andouille sausage links chopped
  • 1 tbsp Butter
  • 2 tbsp Heavy cream
  • 4 Eggs
  • 1/2 cup Grape tomatoes quartered
  • 1 tbsp Fresh basil chopped
  • 2 slices Sourdough bread toasted
  • 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Preheat the oven to 375 degrees.
  • Heat an oven safe nonstick pan on medium heat. Once hot, add the oil. Saute the onion until it starts to soften. Add in the sausage and brown on all sides then remove the pan from the heat.
  • Add the butter and cream into the pan then carefully crack the eggs in. Top with tomatoes and basil.
  • Place the pan in the oven and cook for 8 to 12 minutes until the whites of the egg are firm but the yolk is soft. Season with salt and pepper.
  • Portion, drizzle with a little olive oil, serve with toast and apple.
