Prep the ingredients as instructed above.
Preheat the oven to 375°F (190°C).
Cook the sausage: Place on a baking sheet and cook in the oven until browned and cooked through, reaching an internal temperature of 160°F (71°C). Set aside and keep warm.
Assemble the baked eggs: Using 1 ramekin per portion, pour in the cream and crack in the eggs. Sprinkle with Parmesan cheese and season with salt and black pepper.
Bake the eggs: Place ramekins on a baking tray and bake for 12–15 minutes, until egg whites are set but yolks are still soft. Adjust baking time if firmer yolks are preferred.
Toast the bread: Toast the slices of bread if desired, while eggs are baking.
Garnish: Remove ramekins from the oven and sprinkle each with chopped fresh parsley.
Serve baked eggs with toasted bread, chicken sausage, and orange juice.
