Ingredients
Avocado Toast
- 1 Avocado peeled and pitted
- 1 TBSP Lemon juice
- Salt to taste
- Black pepper to taste
- 2 slices Your choice of bread toasted
- ¼ tsp Red pepper flakes
- 1 tsp Fresh cilantro chopped
Scrambled Eggs:
- 4 Eggs
- 1 TBSP Butter or oil
- Salt to taste
- Black pepper to taste
Coffee:
- Coffee
- Your choice of sweetener
- Your choice of creamer
Instructions
- In a bowl, mash the ripe avocado with a fork until smooth. Add lemon juice, salt, and pepper. Mix well to combine. Set aside.
- Toast the bread.
- Crack the eggs into a bowl and beat them with a fork or whisk until well combined.
- Heat a non-stick skillet over medium heat and add butter or oil.
- Pour the beaten eggs into the skillet and cook, stirring gently to scramble, until they are fully cooked but still moist. Remove from heat.
- Brew and prepare the coffee to your liking.
- Spread the prepared avocado mixture evenly over the toasted bread slices. Optionally, sprinkle red pepper flakes and chopped fresh cilantro over the toast.
- Serve the avocado toast with eggs alongside coffee. Enjoy!
