Ingredients

Dressing

  • 1 tbsp Rice wine vinegar
  • 1/2 tsp Sesame oil
  • 2 tsp Peanut butter
  • 1 tbsp Reduced-sodium soy sauce
  • 1 tsp Molasses

For the Slaw

  • 3 cups Green cabbage shredded
  • 1 cup Red cabbage shredded
  • 1/2 cup Carrots shredded
  • 1/2 cup Scallions chopped
  • 1/3 cup Cashews
  • Sesame seeds garnish
  • 4 Dinner rolls buttered if desired

Instructions

  • In a bowl whisk all the ingredients for the dressing until fully combined. Taste and adjust as needed. Set aside.
  • Toss the cabbages and carrots in a bowl. Portion into bowls and top with scallions, cashews, and chicken (see recipe in menu). Garnish with sesame seeds. Serve with a roll.
