Ahi Tuna Watermelon Tartar

Ingredients

  • 3/4 lb Ahi tuna
  • 2 tsp Chili powder
  • 2 tbsp Extra-virgin olive oil plus more for drizzling
  • 2 cups Watermelon diced into small pieces
  • 3 tbsp Scallions chopped
  • 2 oz Tortilla chips
  • 2 tbsp Jalapeño pepper sliced

Guacamole

  • 2 Avocados pitted
  • 1 tsp Garlic powder to taste
  • 2 tbsp Fresh cilantro chopped, plus more for garnish
  • 2 tsp Lime juice or more to taste
  • 1 tsp Ground cumin or more to taste
  • 1/4 tsp Red pepper flakes use more or less as desired (optional)

Instructions

  • Season the tuna on both sides with chili powder and salt.
  • Heat a nonstick pan or skillet on medium high heat. Once the pan is hot, add a small amount of oil into the pan ( 1/2 to 1 teaspoon). Sear the tuna on both sides golden brown for about 45 seconds per side or to your desired temperature using a thermometer (see below). Remove from the pan and set aside.
  • Dice the tuna into similar sized pieces as the watermelon. In a bowl mix the tuna, watermelon and scallions. Season with salt and pepper. Drizzle with a small amount of oil.
  • Guacamole: Mash the avocado with a fork. Add the remaining ingredients and stir them together. Adjust the amounts as needed to taste. Season with salt and pepper to taste.
  • Serve the tuna and guacamole with tortilla chips. Garnish with jalapeno and cilantro.

Internal Temperatures:
  • Rare: 115 degrees F
  • Medium Rare: 120 degrees F
  • Medium: 125 degrees F
  • Well: over 130 degrees F
