Ingredients
Cucumber Water
- 24 oz Water
- 8 slices Cucumber
- Ice cubes as needed
Vegetable Hummus Wrap
- 2 large Whole wheat tortilla (or preferred type)
- 1 cup Hummus
- 1 cup Carrots shredded
- 1 Cucumber thinly sliced
- 1 Tomato sliced
- 1 cup Olives halved
- 2 TBSP Sunflower seeds
- 1 cup Pickle slices
- 1 cup Arugula
- 1 ripe Avocado sliced
- 6 slices Parmesan cheese shaved from a wedge
- Salt to taste
- Black pepper to taste
Cheese & Fruit Sides
- 2 oz Your choice of cheese (such as Cheddar or Brie)
- 1 Mango sliced
- 1 Apple sliced
Instructions
- Prepare ingredients as listed above.
- Make the cucumber water by combining the cucumber slices and water in a pitcher, then refrigerate for at least 10 minutes to infuse. Serve over ice if desired.
- Lay the tortilla wraps flat on a clean surface and spread an even layer of hummus over each wrap.
- Layer the wraps with carrots, cucumber slices, tomato slices, olives, sunflower seeds, pickle slices, avocado, arugula, and Parmesan cheese. Season with salt and black pepper to taste.
- Fold in the sides, roll tightly, and slice in half.
- Serve alongside cheese slices, sliced mango, sliced apple, and cucumber water.
