Prepare ingredients as listed above.
Make the cucumber water by combining the cucumber slices and water in a pitcher, then refrigerate for at least 10 minutes to infuse. Serve over ice if desired.
Lay the tortilla wraps flat on a clean surface and spread an even layer of hummus over each wrap.
Layer the wraps with carrots, cucumber slices, tomato slices, olives, sunflower seeds, pickle slices, avocado, arugula, and Parmesan cheese. Season with salt and black pepper to taste.
Fold in the sides, roll tightly, and slice in half.
Serve alongside cheese slices, sliced mango, sliced apple, and cucumber water.
