Ingredients

Hibiscus Iced Tea

  • 4 cups Water
  • 2 Hibiscus tea bags (or 2 tsp of loose hibiscus tea)
  • 1-2 TBSP Honey or sugar (adjust to taste)
  • Ice cubes

Sandwich

  • 4 slices Your choice of bread lightly toasted
  • 2 TBSP Mayonnaise
  • 2 TBSP Yellow mustard
  • 6 leaves Romaine lettuce cut to fit the bread
  • 4 slices Tomato
  • Salt to taste
  • Black pepper to taste
  • 8 oz Deli turkey breast
  • 1 Avocado pitted and sliced
  • 2 oz Potato chips
  • 2 Pickle spears

Instructions

  • Bring the water to a boil. Remove from heat and add the hibiscus tea bags (or loose hibiscus tea in a tea infuser). Let steep for 5 - 7 minutes, depending on how strong you like your tea. Remove the tea bags or infuser. Stir in 1-2 TBSP honey or sugar while the tea is still warm, adjusting to taste. Let chill in the freezer or refrigerator.
  • Toast the bread. Spread the mayo and mustard on one side of each slice of bread.
  • Layer with lettuce, tomato, seasoned with salt and pepper, turkey, and avocado.
  • Fill glasses with ice cubes and pour the chilled hibiscus tea over the ice.
  • Cut the sandwich in half. Serve with chips, pickle, and hibiscus iced tea.
