Ingredients

Omelete

  • 1 tsp Butter
  • ½ cup Breakfast sausage links crumbled
  • ½ cup Onion diced
  • ½ cup Bell pepper diced
  • 4 Eggs beaten
  • ½ cup Pepper jack cheese shredded
  • Salt to taste
  • Black pepper to taste

Grapes

  • 2 cups Grapes washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Cook the Sausage: In a medium skillet over medium heat, add the butter and crumbled sausage. Cook, breaking up into smaller pieces until browned and cooked through. Add the onions and peppers sautéing until softened.
  • Pour the eggs into the skillet, swirling to coat the pan evenly. Cook for about 2 - 3 minutes, allowing the eggs to set.
  • Once the eggs are mostly set, add the pepper jack cheese on one half of the omelet. Fold the other half over to cover the filling. Cook for another 1 - 2 minutes until the cheese is melted.
  • Serve the omelet with a side of grapes and orange juice.
