Ingredients
Pumpkin Banana Bread
- 2 Bananas very ripe, mashed
- 1 cup Pumpkin purée canned
- 1 Egg
- 2 TBSP Butter melted
- 1/4 cup Brown sugar
- ½ tsp Vanilla extract
- 2 cups All-purpose flour (or whole wheat flour)
- ½ tsp Baking soda
- ¼ tsp Salt
- ½ tsp Cinnamon
- ¼ tsp Ground nutmeg
- ¼ cup Nuts chopped, or chocolate chips, optional
Cinnamon Honey Butter Sauce
- 2 TBSP Butter
- 1 TBSP Honey
- ¼ tsp Cinnamon
Fruit
- 1 cup Mixed fruit e.g. berries, orange segments, or apple slices
Coffee
- Coffee brewed to your liking
- Your choice of sweetener optional
- Your choice of creamer optional
Instructions
- Prepare all ingredients as listed above.
- Preheat oven: Set oven to 350°F (175°C). Lightly grease a small loaf pan (about 5×3 inches) or line with parchment paper.
- Mash banana: In a medium mixing bowl, mash the ripe banana until smooth.
- Add wet ingredients: Stir in pumpkin purée, egg, melted butter, brown sugar, and vanilla extract until well combined.
- Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- Combine mixtures: Add the dry ingredients to the wet mixture and stir until just incorporated. Fold in nuts or chocolate chips if desired.
- Bake: Pour the batter into the prepared loaf pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before slicing.
- Make the cinnamon honey butter: In a bowl mix butter, honey and cinnamon until combined.
- Brew coffee: Prepare coffee to your liking and add sweetener or creamer if desired.
- Serve: the pumpkin banana bread with cinnamon honey butter, fruit, and coffee.
