Ingredients

Pumpkin Banana Bread

  • 2 Bananas very ripe, mashed
  • 1 cup Pumpkin purée canned
  • 1 Egg
  • 2 TBSP Butter melted
  • 1/4 cup Brown sugar
  • ½ tsp Vanilla extract
  • 2 cups All-purpose flour (or whole wheat flour)
  • ½ tsp Baking soda
  • ¼ tsp Salt
  • ½ tsp Cinnamon
  • ¼ tsp Ground nutmeg
  • ¼ cup Nuts chopped, or chocolate chips, optional

Cinnamon Honey Butter Sauce

  • 2 TBSP Butter
  • 1 TBSP Honey
  • ¼ tsp Cinnamon

Fruit

  • 1 cup Mixed fruit e.g. berries, orange segments, or apple slices

Coffee

  • Coffee brewed to your liking
  • Your choice of sweetener optional
  • Your choice of creamer optional

Instructions

  • Prepare all ingredients as listed above.
  • Preheat oven: Set oven to 350°F (175°C). Lightly grease a small loaf pan (about 5×3 inches) or line with parchment paper.
  • Mash banana: In a medium mixing bowl, mash the ripe banana until smooth.
  • Add wet ingredients: Stir in pumpkin purée, egg, melted butter, brown sugar, and vanilla extract until well combined.
  • Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  • Combine mixtures: Add the dry ingredients to the wet mixture and stir until just incorporated. Fold in nuts or chocolate chips if desired.
  • Bake: Pour the batter into the prepared loaf pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before slicing.
  • Make the cinnamon honey butter: In a bowl mix butter, honey and cinnamon until combined.
  • Brew coffee: Prepare coffee to your liking and add sweetener or creamer if desired.
  • Serve: the pumpkin banana bread with cinnamon honey butter, fruit, and coffee.
