Ingredients

Muesli with Yogurt

  • 2 ½ TBSP Almonds toasted and coarsely chopped
  • 1 ¼ TBSP Sunflower seeds toasted
  • ½ cup Granola
  • 2 ½ TBSP Dried currants
  • 2 ½ TBSP Dried apricots finely chopped
  • ¾ cup Greek yogurt

Garnish

  • 1 Apple sliced
  • 2 tsp Honey

Green Juice

  • 1 Pear cored and halved
  • 1 stalk Celery cut into several pieces
  • ½ Cucumber cut into several pieces
  • ¼ cup Fresh parsley packed, stems OK
  • ½ inch piece Fresh ginger peeled
  • 1 Orange peeled
  • 2 cups Water as needed for blending

Instructions

  • Prepare all ingredients as listed.
  • (Optional) Toast the almonds and sunflower seeds in a dry skillet over medium heat for 2–3 minutes, stirring often. Let cool slightly.
  • In a mixing bowl, combine granola, currants, chopped apricots, almonds, and sunflower seeds.
  • Divide yogurt between two bowls. Spoon muesli mixture evenly over the top. Garnish with apple slices and drizzle with honey.
  • For the juice, combine pear, celery, cucumber, parsley, ginger, orange, and water in a blender or juicer. Blend until smooth. Strain if desired.
  • Serve the muesli bowls with fresh green juice. Enjoy!
