Prepare all ingredients as listed.
(Optional) Toast the almonds and sunflower seeds in a dry skillet over medium heat for 2–3 minutes, stirring often. Let cool slightly.
In a mixing bowl, combine granola, currants, chopped apricots, almonds, and sunflower seeds.
Divide yogurt between two bowls. Spoon muesli mixture evenly over the top. Garnish with apple slices and drizzle with honey.
For the juice, combine pear, celery, cucumber, parsley, ginger, orange, and water in a blender or juicer. Blend until smooth. Strain if desired.
Serve the muesli bowls with fresh green juice. Enjoy!
