Ingredients

Muesli with yogurt

  • 2 1/2 TBSP Almonds toasted and coarsely chopped
  • 1 1/4 TBSP Sunflower seeds toasted
  • 1/2 cup Granola
  • 2 1/2 TBSP Dried currants
  • 2 1/2 TBSP Dried apricots finely chopped
  • 3/4 cup Yogurt Greek or regular

Garnish

  • 1 Apple sliced
  • 2 tsp Honey

Green Juice

  • 1 Pear cored and halved
  • 1 stalk Celery cut into several pieces
  • 1/2 Cucumber cut into several pieces
  • 1/4 cup Fresh parsley packed, stems OK
  • 1/2 inch piece Fresh ginger peeled
  • 1 Orange peeled
  • 2 cups Water as needed for blending

Instructions

  • Prepare ingredients as described above.
  • Toast nuts and seeds (optional): In a dry skillet over medium heat, toast almonds and sunflower seeds for 2–3 minutes, stirring often. Set aside to cool slightly.
  • Mix muesli base: In a bowl, combine granola, dried currants, chopped dried apricots, toasted almonds, and sunflower seeds.
  • Assemble bowls: Divide yogurt between two bowls. Spoon the muesli mixture evenly over the top. Garnish with apple slices and drizzle with honey.
  • Make juice: In a blender or juicer, combine pear, celery, cucumber, parsley, ginger, orange, and water. Blend until smooth. Strain if desired.
  • Serve the muesli with green juice for a fresh and energizing breakfast.
