Ingredients
Muesli with yogurt
- 2 1/2 TBSP Almonds toasted and coarsely chopped
- 1 1/4 TBSP Sunflower seeds toasted
- 1/2 cup Granola
- 2 1/2 TBSP Dried currants
- 2 1/2 TBSP Dried apricots finely chopped
- 3/4 cup Yogurt Greek or regular
Garnish
- 1 Apple sliced
- 2 tsp Honey
Green Juice
- 1 Pear cored and halved
- 1 stalk Celery cut into several pieces
- 1/2 Cucumber cut into several pieces
- 1/4 cup Fresh parsley packed, stems OK
- 1/2 inch piece Fresh ginger peeled
- 1 Orange peeled
- 2 cups Water as needed for blending
Instructions
- Prepare ingredients as described above.
- Toast nuts and seeds (optional): In a dry skillet over medium heat, toast almonds and sunflower seeds for 2–3 minutes, stirring often. Set aside to cool slightly.
- Mix muesli base: In a bowl, combine granola, dried currants, chopped dried apricots, toasted almonds, and sunflower seeds.
- Assemble bowls: Divide yogurt between two bowls. Spoon the muesli mixture evenly over the top. Garnish with apple slices and drizzle with honey.
- Make juice: In a blender or juicer, combine pear, celery, cucumber, parsley, ginger, orange, and water. Blend until smooth. Strain if desired.
- Serve the muesli with green juice for a fresh and energizing breakfast.
