Ingredients
Muesli with Yogurt
- 2 TBSP Almonds toasted and coarsely chopped
- 1 TBSP Sunflower seeds toasted
- ½ cup Granola
- ¾ cup Yogurt Greek or regular
- 2 TBSP Dried currants
- 2 TBSP Dried apricots finely chopped
- ½ Apple sliced
- 2 tsp Honey
Green Juice
- 1 Pear cored and halved
- 1 stalk Celery cut into several pieces
- ½ Cucumber cut into several pieces
- ¼ cup Fresh parsley packed, stems OK
- ½- inch piece Fresh ginger peeled
- 1 Orange peeled
- 2 cups Water as needed for blending
Instructions
- Prepare the ingredients as described above.
- Toast nuts and seeds (optional): In a dry skillet over medium heat, toast the almonds and sunflower seeds for 2–3 minutes, stirring often. Allow to cool slightly.
- Mix the muesli base: In a mixing bowl, combine the granola, currants, dried apricots, toasted almonds, and toasted sunflower seeds.
- Assemble the muesli bowls: Portion yogurt into bowls. Spoon the muesli mixture evenly over the yogurt. Top with sliced apple and drizzle with honey.
- Make the green juice: In a high-speed blender or juicer, combine pear, celery, cucumber, parsley, ginger, and orange. Add cold water as needed for blending. Blend until smooth, then strain through a fine mesh sieve or nut milk bag for a smoother juice.
- Serve the muesli with yogurt alongside a glass of green juice.
