Prepare the ingredients as described above.
Toast nuts and seeds (optional): In a dry skillet over medium heat, toast the almonds and sunflower seeds for 2–3 minutes, stirring often. Allow to cool slightly.
Mix the muesli base: In a mixing bowl, combine the granola, currants, dried apricots, toasted almonds, and toasted sunflower seeds.
Assemble the muesli bowls: Portion yogurt into bowls. Spoon the muesli mixture evenly over the yogurt. Top with sliced apple and drizzle with honey.
Make the green juice: In a high-speed blender or juicer, combine pear, celery, cucumber, parsley, ginger, and orange. Add cold water as needed for blending. Blend until smooth, then strain through a fine mesh sieve or nut milk bag for a smoother juice.
Serve the muesli with yogurt alongside a glass of green juice.
