Ingredients

Muesli with Yogurt

  • 2 1/2 TBSP Almonds toasted and coarsely chopped
  • 1 1/4 TBSP Sunflower seeds toasted
  • 1/2 cup Granola
  • 2 1/2 TBSP Dried currants
  • 2 1/2 TBSP Dried apricots finely chopped
  • 3/4 cup Greek yogurt

Garnish

  • 1 Apple sliced
  • 2 tsp Honey

Green Juice

  • 1 Pear cored and halved
  • 1 stalk Celery cut into several pieces
  • 1/2 Cucumber cut into several pieces
  • 1/4 cup Fresh parsley packed, stems OK
  • 1/2 inch piece Fresh ginger peeled
  • 1 Orange peeled
  • 2 cups Water as needed for blending

Instructions

  • Prepare all ingredients as listed.
  • Toast the almonds and sunflower seeds in a dry skillet over medium heat for 2 to 3 minutes, stirring often. Let cool slightly.
  • In a mixing bowl, combine granola, chopped apricots, currants, almonds, and sunflower seeds.
  • Divide the yogurt between two bowls. Spoon the muesli mixture evenly on top. Add apple slices and drizzle with honey.
  • For the green juice, add pear, celery, cucumber, parsley, ginger, orange, and water to a blender or juicer. Blend until smooth. Strain if desired.
  • Serve the muesli bowls with fresh green juice.
