Prepare all ingredients as listed.
Toast the almonds and sunflower seeds in a dry skillet over medium heat for 2 to 3 minutes, stirring often. Let cool slightly.
In a mixing bowl, combine granola, chopped apricots, currants, almonds, and sunflower seeds.
Divide the yogurt between two bowls. Spoon the muesli mixture evenly on top. Add apple slices and drizzle with honey.
For the green juice, add pear, celery, cucumber, parsley, ginger, orange, and water to a blender or juicer. Blend until smooth. Strain if desired.
Serve the muesli bowls with fresh green juice.
