Ingredients

Mexican Breakfast Burrito

  • 2 tsp Extra virgin olive oil
  • ½ small Yellow Onion diced
  • ½ Red bell pepper diced
  • 1 cup Baby spinach
  • Salt to taste
  • Black pepper to taste
  • 4 large Eggs beaten
  • ¼ cup Black beans rinsed and drained
  • 2 large Whole wheat tortilla (10 inch)
  • ¼ cup Cheddar cheese or pepper jack cheese, shredded
  • ½ Avocado sliced
  • ¼ cup Salsa (optional)
  • Hot sauce (optional)

Kiwi Banana Pear + Chia Seeds

  • 2 Kiwis peeled and sliced
  • 1 Banana peeled and sliced
  • 1 Pear ripe, cored and sliced
  • 1 tsp Chia seeds

Green Tea

  • 2 cups Water
  • 2 bags Green Tea or 1 tsp loose leaf green tea per serving

Milk

  • 16 oz Milk cold

Instructions

  • Prepare all ingredients as instructed.
  • Heat olive oil in a nonstick skillet over medium heat.
  • Add yellow onion and red bell pepper and sauté for 4 to 5 minutes until softened and fragrant.
  • Stir in spinach and cook just until wilted, about 30 to 60 seconds.Season lightly with salt and black pepper.
  • Pour in beaten eggs and add black beans. Scramble gently until eggs are just set.
  • Warm whole wheat tortillas in a dry skillet or microwave until pliable.
  • Spoon egg mixture evenly onto tortillas.
  • Top with cheese and avocado, then fold and roll into burritos.
  • Prepare the green tea by heating water until hot but not boiling. Steep tea bags or loose leaf tea for 2 to 3 minutes, then remove or strain.
  • Serve burritos with optional salsa or hot sauce, alongside fruit bowls, green tea, and milk.
