Ingredients

Toppings

  • 4 oz Tortilla chips
  • ¼ cup Monterey jack cheese shredded
  • ¼ cup Pepper jack cheese shredded
  • 1/4 cup Cheddar cheese shredded
  • ½ cup Refried beans
  • 1 cups Romaine lettuce shredded
  • ½ cup Tomato diced small
  • 1 Jalapeño pepper sliced (optional)
  • ¼ cup Red onion diced
  • Sour cream optional

Guacamole

  • 2 Avocados pitted and diced
  • 2 tsp Red onion minced
  • ½ tsp Garlic powder
  • ½ tsp Ground cumin
  • 1 tsp Lime juice
  • 1 tsp Fresh cilantro chopped

Seasoning

  • Salt to taste
  • Black pepper to taste

Beef

  • 8 oz Ground beef
  • ½ tsp Onion powder
  • ½ tsp Ground cumin
  • ½ tsp Garlic powder
  • ½ tsp Paprika
  • 1/2 tsp Chili powder

Beer

  • 24 oz Light beer cold

Instructions

  • Prep the ingredients for the toppings and guacamole per the instructions above.
  • Preheat the oven broiler on low.
  • Make the Guacamole: Mash the avocado in a bowl with a fork until smooth. Mix in the remaining ingredients until fully combined. Season with salt and pepper to taste. Refrigerate until ready to serve.
  • Make the beef: Heat a nonstick pan over medium heat. Once hot, add the ground beef, onion powder, cumin, garlic powder, paprika, and chili powder. Break up the beef into smaller pieces using a spatula. Once the beef is no longer pink, season with salt and pepper.
  • Place the tortilla chips on a baking sheet. Spoon the beef over the tortilla chips; top with all the cheeses, along with refried beans. Broil until the cheese has melted.
  • Serve: Remove nachos from the oven and top with lettuce, tomato, jalapeño (if using), onion, sour cream, and guacamole. Enjoy with a cold beer.
