- 4 oz Tortilla chips
- ¼ cup Monterey jack cheese shredded
- ¼ cup Pepper jack cheese shredded
- 1/4 cup Cheddar cheese shredded
- ½ cup Refried beans
- 1 cups Romaine lettuce shredded
- ½ cup Tomato diced small
- 1 Jalapeño pepper sliced (optional)
- ¼ cup Red onion diced
- Sour cream optional
Guacamole
- 2 Avocados pitted and diced
- 2 tsp Red onion minced
- ½ tsp Garlic powder
- ½ tsp Ground cumin
- 1 tsp Lime juice
- 1 tsp Fresh cilantro chopped
Seasoning
- Salt to taste
- Black pepper to taste
Beef
- 8 oz Ground beef
- ½ tsp Onion powder
- ½ tsp Ground cumin
- ½ tsp Garlic powder
- ½ tsp Paprika
- 1/2 tsp Chili powder
Beer
- 24 oz Light beer cold
Instructions
- Prep the ingredients for the toppings and guacamole per the instructions above.
- Preheat the oven broiler on low.
- Make the Guacamole: Mash the avocado in a bowl with a fork until smooth. Mix in the remaining ingredients until fully combined. Season with salt and pepper to taste. Refrigerate until ready to serve.
- Make the beef: Heat a nonstick pan over medium heat. Once hot, add the ground beef, onion powder, cumin, garlic powder, paprika, and chili powder. Break up the beef into smaller pieces using a spatula. Once the beef is no longer pink, season with salt and pepper.
- Place the tortilla chips on a baking sheet. Spoon the beef over the tortilla chips; top with all the cheeses, along with refried beans. Broil until the cheese has melted.
- Serve: Remove nachos from the oven and top with lettuce, tomato, jalapeño (if using), onion, sour cream, and guacamole. Enjoy with a cold beer.
