Ingredients
Jambon Beurre
- 2 TBSP Butter softened
- 1 TBSP Fresh chives minced
- 1 TBSP Fresh parsley minced
- ½ tsp Dijon mustard
- 1 clove Garlic grated
- Salt to taste
- Black pepper to taste
- 1 cup Arugula
- ½ TBSP Lemon juice
- 2 Sub rolls or french baguette
- 6 oz Deli ham thinly sliced
- 2 oz Brie cheese sliced
- 2 Pickle spears
Mango Lassi
- 1 cup Frozen mango chopped
- ¼ cup Plain yogurt
- 3 cups Milk
- 1 TBSP Maple syrup to taste
- ¼ tsp Ground cardamom
Carrots and Hummus
- 1 cup Carrots peeled and cut into sticks, or baby carrots
- ½ cup Hummus
Instructions
- Prepare ingredients: Prepare all ingredients as listed. Remove the Brie from the refrigerator and let sit at room temperature for about 5 minutes so it softens slightly.
- Make herb butter: In a small bowl, mix the softened butter, chives, parsley, Dijon mustard, and grated garlic until well combined. Season with salt and black pepper to taste.
- Dress the arugula: In a separate bowl, toss the arugula with lemon juice and a light pinch of salt and black pepper. Set aside.
- Assemble sandwich: Spread the herb butter inside the rolls. Layer with deli ham, Brie, and arugula. Cut in half if preferred.
- Make mango lassi: In a blender, combine the ingredients. Blend until completely smooth and creamy. Taste and adjust sweetness if needed.
- Serve the jambon beurre with carrot sticks, hummus, pickle spears, and mango lassi.
