Ingredients

Jambon Beurre

  • 2 TBSP Butter softened
  • 1 TBSP Fresh chives minced
  • 1 TBSP Fresh parsley minced
  • ½ tsp Dijon mustard
  • 1 clove Garlic grated
  • Salt to taste
  • Black pepper to taste
  • 1 cup Arugula
  • ½ TBSP Lemon juice
  • 2 Sub rolls or french baguette
  • 6 oz Deli ham thinly sliced
  • 2 oz Brie cheese sliced
  • 2 Pickle spears

Mango Lassi

  • 1 cup Frozen mango chopped
  • ¼ cup Plain yogurt
  • 3 cups Milk
  • 1 TBSP Maple syrup to taste
  • ¼ tsp Ground cardamom

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks, or baby carrots
  • ½ cup Hummus

Instructions

  • Prepare ingredients: Prepare all ingredients as listed. Remove the Brie from the refrigerator and let sit at room temperature for about 5 minutes so it softens slightly.
  • Make herb butter: In a small bowl, mix the softened butter, chives, parsley, Dijon mustard, and grated garlic until well combined. Season with salt and black pepper to taste.
  • Dress the arugula: In a separate bowl, toss the arugula with lemon juice and a light pinch of salt and black pepper. Set aside.
  • Assemble sandwich: Spread the herb butter inside the rolls. Layer with deli ham, Brie, and arugula. Cut in half if preferred.
  • Make mango lassi: In a blender, combine the ingredients. Blend until completely smooth and creamy. Taste and adjust sweetness if needed.
  • Serve the jambon beurre with carrot sticks, hummus, pickle spears, and mango lassi.
