Ingredients
Jambon Beurre
- 2 TBSP Butter softened
- 1 TBSP Scallions fresh, minced
- 1 TBSP Fresh parsley minced
- ½ tsp Dijon mustard
- 1 clove Garlic grated
- Salt to taste
- Black pepper to taste
- 1 cup Arugula
- ½ TBSP Lemon juice
- 4 oz Brie cheese sliced
- 2 Sub rolls
- 6 oz Deli ham thinly sliced
Sides
- 1 cup Carrots peeled and cut into sticks (or baby carrots)
- ½ cup Hummus
Fruit
- 2 Pears sliced
Lemon Sparkling Water with Chia Seeds
- 24 oz Sparkling water cold
- 1 Lemon sliced
- 2 tsp Chia seeds
Instructions
- Prep all ingredients as listed.
- Slice the Brie cheese and allow it to sit at room temperature until softened for easier spreading.
- In a bowl, mix the softened butter, minced chives, minced parsley, Dijon mustard, and grated garlic until well combined. Season with salt and black pepper to taste
- In a separate bowl, toss the arugula with lemon juice and season lightly with salt and black pepper.
- Spread the herb butter inside the rolls.
- Layer with deli ham, Brie and arugula. Cut in half if preferred.
- In a large glass or pitcher, combine the sparkling water, lemon slices, and chia seeds. Stir thoroughly, let sit for 2–3 minutes to allow the chia seeds to hydrate.
- Serve the jambon beurre with carrot sticks, hummus, sliced pears, and lemon chia sparkling water.
