Ingredients
Rice
- 1/2 cup White rice
BBQ Chicken
- 1/4 cup Ketchup
- 2 TBSP Brown sugar
- 2 TBSP Water
- 1 TBSP Apple cider vinegar
- 1/2 TBSP Worcestershire sauce
- 1/2 TBSP Molasses
- 1/2 tsp Salt
- 1/4 tsp Garlic powder
- 1/4 tsp Onion Powder
- 1/8 tsp Ground mustard
- 1/8 tsp Paprika
- 8 oz Chicken breast boneless skinless
Grilled Asparagus
- ½ bunch Asparagus ends trimmed
- 1 TBSP Extra-virgin olive oil
- Salt to taste
- Black pepper to taste
Milk
- 16 oz Milk
Instructions
- Prepare the Rice: Rinse the rice in a mesh strainer. Cook according to the instructions on the package. Once tender, season with salt and pepper.
- Make BBQ Chicken: Combine all ingredients in a saucepan (except the chicken) over medium heat and bring to a low simmer for 3 - 5 minutes. Then set aside. Separate half of the sauce for serving.
- Preheat a grill or grill pan on medium heat. Brush the BBQ sauce on all pieces of chicken. Place the chicken on the grill. Cook, turning occasionally, lightly brushing with sauce, to an internal temperature of 160°F (71°C). Then set aside.
- Toss the asparagus with oil and season with salt and pepper.
- Grill the asparagus until nicely charred and tender.
- Enjoy the chicken with rice, asparagus, and milk.
