Ingredients

Herb-Garlic Aioli

  • 2 TBSP Mayonnaise
  • 1 clove Garlic small, minced
  • 1 tsp Lemon juice
  • 1 tsp Fresh herbs chopped (parsley, dill, or chives)
  • Salt
  • Black pepper

Sandwiches

  • 4 slices Your choice of bread
  • 6 oz Leftover ham or chicken
  • 2 slices Your choice of cheese (Swiss, cheddar, provolone, or preferred)
  • 2 large Lettuce leaves
  • 1 medium Tomato sliced

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks (or use baby carrots)
  • ½ cup Hummus

Lemon Sparkling Water

  • 24 oz Sparkling water cold
  • 1 Lemon sliced
  • Ice cubes for serving

Instructions

  • Prepare the ingredients as instructed.
  • In a small bowl, mix mayonnaise, minced garlic, lemon juice, fresh herbs, salt, and black pepper until smooth. Set aside.
  • (Optional) Lightly toast the bread until just golden.
  • Spread the herb-garlic aioli evenly on one side of each bread slice.
  • Layer with lettuce, tomato, ham or chicken, and cheese. Cut in half.
  • Combine the sparkling water and lemon.
  • Serve with carrots, hummus, and lemon sparkling water.
