Ingredients

Egg, Fried Ham, Melted Cheddar and Dijonnaise on Ciabatta

  • 2 TBSP Dijon mustard
  • 2 TBSP Mayonnaise
  • 1 TBSP Butter for frying eggs and ham
  • 8 slices Deli ham preferably thick-cut
  • 4 Eggs
  • 2 slices Cheddar cheese
  • 2 Ciabatta rolls
  • Salt to taste
  • Black pepper to taste

Fruit

  • 1 cup Mixed fresh fruit such as orange segments berries or apple slices

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prep Ingredients: In a small bowl, mix Dijon mustard and mayonnaise to create Dijonnaise. Slice the ciabatta rolls in half.
  • Cook the Ham: Heat a skillet over medium heat and melt the butter. Add the ham slices and cook until browned on both sides. Remove from the skillet and set aside.
  • Fry the Eggs: In the same skillet, add more butter if needed. Crack the eggs into the skillet and cook to your desired doneness—sunny-side up, over-easy, or scrambled. Season with salt and black pepper.
  • Once nearly done, place a slice of cheddar cheese over each egg and let it melt.
  • Toast the Ciabatta: While the eggs are cooking, toast the ciabatta rolls in a toaster or skillet until golden and crispy.
  • Assemble the Sandwich: Spread Dijonnaise on the bottom halves of the toasted ciabatta. Layer the fried ham and eggs with melted cheddar. Top with the other ciabatta halves and cut in half.
  • Serve: Plate the sandwiches alongside the fresh fruit. Pour orange juice into glasses. Enjoy your breakfast!
