Ingredients

Cucumber Water

  • 24 oz Water
  • 8 slices Cucumber
  • 1/4 cup Fresh mint leaves
  • Ice cubes

Grilled Sausage

  • 1 TBSP Extra-virgin olive oil
  • 1/2 Green bell pepper cut into large pieces
  • 1/2 Red bell pepper cut into large pieces
  • 1/4 Onion sliced into rounds
  • 2 Italian sausage links about 4 oz per link
  • 2 Sausage buns about 3/4 of the way through (if needed cut the bun to the length of the sausage)
  • Ketchup
  • Yellow mustard
  • 4 slices Watermelon

Instructions

  • In a pitcher or large jug, combine water with the cucumber slices and mint. Stir well, chill in the refrigerator, and add ice cubes just before serving.
  • Preheat a grill or grill pan on medium heat. Grill the peppers and onions until tender. Remove onions and peppers and dice.
  • Grill the sausage, getting a nice char on all sides to an internal temperature of 155°F (68°C) using a thermometer.
  • Place the cooked sausage link on the bun, and top with peppers and onions. Top with ketchup or mustard as preferred. Serve with watermelon and cucumber mint water.
