Ingredients
Grilled Sausage
- 1 TBSP Extra-virgin olive oil
- ½ cup Green bell pepper diced
- ½ cup Red bell pepper diced
- ⅓ cup Onion diced
- Salt to taste
- Black pepper to taste
- 2 Italian sausage links (about 4 oz each)
- 2 Long buns (top-sliced or cut ¾ of the way through)
- Ketchup for serving
- Yellow mustard for serving
Baked Beans
- 2 cups Baked beans
Watermelon
- 2 slices Watermelon
Peach Ginger Chia Fresca
- 8 oz Peach juice
- 12 oz Water
- 2 TBSP Maple syrup or honey
- 1 TBSP Fresh ginger grated
- ½ tsp Chia seeds
- pinch Salt
- 2 sprigs Fresh mint for garnish
Instructions
- Prep all ingredients as instructed above.
- Heat olive oil in a skillet over medium heat. Sauté the green and red bell peppers and onion until tender and golden brown, about 7–10 minutes. Season with salt and black pepper.
- Preheat a grill or grill pan over medium heat. Grill the sausage links until they develop a nice char on all sides and reach an internal temperature of 160°F (71°C) for safe consumption.
- Place each grilled sausage in a prepared bun. Top with the sautéed peppers and onions, then add ketchup and yellow mustard as desired.
- Warm the baked beans on the stovetop or in the microwave until hot.
- Make the Peach Ginger Chia Fresca: combine all the ingredients together. Let sit for 5 minutes to allow the chia seeds to expand, then stir again.
- Serve the grilled sausage with baked beans, watermelon slices, and peach ginger chia fresca. Enjoy!
