Ingredients

Grilled Sausage

  • 1 TBSP Extra-virgin olive oil
  • ½ cup Green bell pepper diced
  • ½ cup Red bell pepper diced
  • cup Onion diced
  • Salt to taste
  • Black pepper to taste
  • 2 Italian sausage links (about 4 oz each)
  • 2 Long buns (top-sliced or cut ¾ of the way through)
  • Ketchup for serving
  • Yellow mustard for serving

Baked Beans

  • 2 cups Baked beans

Watermelon

  • 2 slices Watermelon

Peach Ginger Chia Fresca

  • 8 oz Peach juice
  • 12 oz Water
  • 2 TBSP Maple syrup or honey
  • 1 TBSP Fresh ginger grated
  • ½ tsp Chia seeds
  • pinch Salt
  • 2 sprigs Fresh mint for garnish

Instructions

  • Prep all ingredients as instructed above.
  • Heat olive oil in a skillet over medium heat. Sauté the green and red bell peppers and onion until tender and golden brown, about 7–10 minutes. Season with salt and black pepper.
  • Preheat a grill or grill pan over medium heat. Grill the sausage links until they develop a nice char on all sides and reach an internal temperature of 160°F (71°C) for safe consumption.
  • Place each grilled sausage in a prepared bun. Top with the sautéed peppers and onions, then add ketchup and yellow mustard as desired.
  • Warm the baked beans on the stovetop or in the microwave until hot.
  • Make the Peach Ginger Chia Fresca: combine all the ingredients together. Let sit for 5 minutes to allow the chia seeds to expand, then stir again.
  • Serve the grilled sausage with baked beans, watermelon slices, and peach ginger chia fresca. Enjoy!
