Ingredients
Grilled Sausage Sandwich
- 1 TBSP Extra-virgin olive oil
- 1/2 cup Green bell pepper diced
- 1/2 cup Red bell pepper diced
- 1/3 cup Onion diced
- Salt
- Black pepper
- 2 Italian sausage links about 4 oz per link
- 2 Long buns top sliced bun or slice a bun on top about 3/4 of the way through (if needed, cut the bun to the length of the sausage)
- Ketchup
- Yellow mustard
Baked Beans
- 2 cups Baked beans your preference
Watermelon Slices
- 2 slices Watermelon
Peach Ginger Chia Fresca
- 1 TBSP Fresh ginger grated
- 8 oz Peach juice
- 12 oz Water
- 2 TBSP Maple syrup or honey (your choice)
- 1/2 tsp Chia seeds
- pinch Salt
- Fresh mint for garnish
Instructions
- Prep all ingredients as described above.
- Heat the olive oil in a skillet over medium heat. Sauté the green and red bell peppers and onion until tender and golden brown, about 7–10 minutes. Remove from heat and season with salt and black pepper to taste.
- Preheat a grill or grill pan on medium heat. Grill the sausage links until they develop a nice char on all sides and reach an internal temperature of 160°F (71°C) for safe consumption.
- Place each grilled sausage link into a prepared bun. Top with the sautéed peppers and onions, and add ketchup and yellow mustard as desired.
- Make the peach ginger chia fresca: Combine all the ingredients. Let sit for 5 minutes to allow the chia seeds to expand, then stir again.
- Serve the grilled sausage in a bun topped with grilled onion and pepper with baked beans, watermelon and peach ginger chia fresca.
