Ingredients
For the Tomato Soup:
- 14 oz Crushed tomatoes
- 1 cup Vegetable broth (or chicken broth)
- 1/2 cup Onion finely chopped
- 1 clove Garlic minced
- 1 TBSP Extra-virgin olive oil
- 1/2 tsp Dried basil
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 1/4 cup Heavy cream (optional for creaminess)
For the Grilled Ham and Cheese Sandwiches:
- 4 slices Your choice of bread
- 4 oz Deli ham sliced
- 4 oz Cheddar cheese (or cheese of your choice), sliced
- 2 TBSP Unsalted butter (for spreading on the bread)
For the Lemon Sparkling Water:
- 24 oz Sparkling water
- 4 slices Lemon
- Ice cubes optional
Instructions
- Prepare the Tomato Soup Heat the olive oil in a medium pot over medium heat. Add the finely chopped onion and sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for 1 minute, ensuring it doesn’t burn. Add the crushed tomatoes, vegetable broth, dried basil, salt, and pepper. Stir the mixture well, bring it to a simmer, and cook for 10–12 minutes, stirring occasionally. For a smoother soup, use an immersion blender directly in the pot or transfer the soup to a blender and puree until smooth. If you prefer added richness, stir in 1/4 cup of heavy cream. Keep the soup warm on low heat while you prepare the sandwiches.
- Make the Grilled Ham and Cheese Sandwiches Butter one side of each slice of bread. Heat a skillet over medium heat and place one slice of bread, butter-side-down, onto the skillet. Layer sliced ham and sliced cheese on top of the bread, then cover with another slice of bread, butter-side-up. Cook the sandwich for 3–4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crisp, and the cheese has melted completely.
- Prepare the Lemon Sparkling Water Mix 24 ounces of sparkling water with a squeeze of fresh lemon juice. Serve over ice if desired.
- Serve Slice the sandwiches in half and serve them alongside the hot tomato soup. Pair the meal with a refreshing glass of lemon sparkling water.
