Ingredients

Green Goddess Wrap

  • 1 TBSP Fresh chives finely chopped
  • 1 TBSP Fresh tarragon finely chopped
  • 2 TBSP Mayonnaise
  • 2 TBSP Greek yogurt
  • 1/2 Lemon zested then juiced
  • 1 tsp Extra-virgin olive oil plus more for drizzling
  • Salt to taste
  • Black pepper to taste
  • 1/2 head Butter lettuce large leaves, torn
  • 1/4 Cucumber thinly sliced
  • 2 large Flour tortillas
  • 4 oz Fresh mozzarella sliced ¼ inch thick
  • 1 cup Alfalfa sprouts
  • 1 Avocado thinly sliced

Chips and Guacamole

  • 1 Avocado halved
  • 1 TBSP Lime juice
  • 2 TBSP Fresh cilantro chopped
  • 1/4 tsp Garlic powder
  • Salt to taste
  • Black pepper to taste
  • 2 oz Tortilla chips

Sliced Pear

  • 1 Pear sliced

Cinnamon-Honey Almond Milk

  • 2 cups Almond milk
  • 2 tsp Honey
  • ½ tsp Ground cinnamon

Instructions

  • Prep ingredients as described above.
  • Make Green Goddess Dressing: Place chives, tarragon, mayonnaise, and yogurt in a blender along with zest and juice of the lemon, oil, and salt and pepper to taste. Purée until smooth.
  • Squeeze juice from the remaining lemon half over lettuce and cucumbers in a medium bowl. Drizzle with oil; season with salt and pepper. Toss to coat.
  • Spread the dressing in the middle of each tortilla.
  • Layer the tortilla with lettuce, cucumbers, mozzarella, sprouts, and avocado. Season with salt and pepper.
  • In a medium bowl, mash the avocado with lime juice until mostly smooth. Add cilantro, garlic powder, salt, and pepper, and stir until creamy. Transfer to a serving bowl and serve with tortilla chips.
  • Mix almond milk with honey and cinnamon until combined.
  • Serve the Green Goddess wraps alongside chips and guacamole, sliced pear, and cinnamon-honey almond milk.
