Prep ingredients as described above.
Make Green Goddess Dressing: Place chives, tarragon, mayonnaise, and yogurt in a blender along with zest and juice of the lemon, oil, and salt and pepper to taste. Purée until smooth.
Squeeze juice from the remaining lemon half over lettuce and cucumbers in a medium bowl. Drizzle with oil; season with salt and pepper. Toss to coat.
Spread the dressing in the middle of each tortilla.
Layer the tortilla with lettuce, cucumbers, mozzarella, sprouts, and avocado. Season with salt and pepper.
In a medium bowl, mash the avocado with lime juice until mostly smooth. Add cilantro, garlic powder, salt, and pepper, and stir until creamy. Transfer to a serving bowl and serve with tortilla chips.
Mix almond milk with honey and cinnamon until combined.
Serve the Green Goddess wraps alongside chips and guacamole, sliced pear, and cinnamon-honey almond milk.
