Ingredients
Greek Grilled Chicken Sandwich
- 3/4 tsp Garlic powder
- 3/4 tsp Dried oregano
- 1 tsp Lemon juice
- 3 tsp Extra-virgin olive oil
- Salt
- Black pepper
- 8 oz Chicken breast boneless skinless butterflied
- 2 Whole wheat bun
- 1 TBSP Mayonnaise
- 2 cups Butter lettuce
- 4 slices Tomato
- 2 slices Swiss cheese
- 1/4 cup Red onion thinly sliced
Carrots and Hummus
- 1 cup Carrots peeled and cut into sticks or baby carrots
- 1/3 cup Hummus
Blueberries
- 1 cup Fresh blueberries
Lemon Sparkling Water + Chia Seeds
- 24 oz Sparkling water cold
- 1 Lemon sliced
- 2 tsp Chia seeds
Instructions
- In a bowl, whisk together garlic powder, dried oregano, lemon juice, olive oil, salt, and black pepper.
- Add chicken breast and coat evenly with the marinade.
- Preheat a grill or griddle pan over medium heat.
- Grill the chicken until fully cooked, reaching an internal temperature of 165°F (74°C). Remove from heat and allow to rest briefly.
- Lightly grill or toast buns until golden.
- Spread mayonnaise on the inside of each bun.
- Layer with lettuce, tomato, grilled chicken, Swiss cheese, and red onion.
- Combine sparkling water, lemon slices, and chia seeds. Stir thoroughly, let rest briefly, then stir again to prevent clumping.
- Serve the sandwich with carrots and hummus, blueberries, and lemon sparkling water with chia seeds.
