Ingredients

Greek Grilled Chicken Sandwich

  • 3/4 tsp Garlic powder
  • 3/4 tsp Dried oregano
  • 1 tsp Lemon juice
  • 3 tsp Extra-virgin olive oil
  • Salt
  • Black pepper
  • 8 oz Chicken breast boneless skinless butterflied
  • 2 Whole wheat bun
  • 1 TBSP Mayonnaise
  • 2 cups Butter lettuce
  • 4 slices Tomato
  • 2 slices Swiss cheese
  • 1/4 cup Red onion thinly sliced

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks or baby carrots
  • 1/3 cup Hummus

Blueberries

  • 1 cup Fresh blueberries

Lemon Sparkling Water + Chia Seeds

  • 24 oz Sparkling water cold
  • 1 Lemon sliced
  • 2 tsp Chia seeds

Instructions

  • In a bowl, whisk together garlic powder, dried oregano, lemon juice, olive oil, salt, and black pepper.
  • Add chicken breast and coat evenly with the marinade.
  • Preheat a grill or griddle pan over medium heat.
  • Grill the chicken until fully cooked, reaching an internal temperature of 165°F (74°C). Remove from heat and allow to rest briefly.
  • Lightly grill or toast buns until golden.
  • Spread mayonnaise on the inside of each bun.
  • Layer with lettuce, tomato, grilled chicken, Swiss cheese, and red onion.
  • Combine sparkling water, lemon slices, and chia seeds. Stir thoroughly, let rest briefly, then stir again to prevent clumping.
  • Serve the sandwich with carrots and hummus, blueberries, and lemon sparkling water with chia seeds.
