Ingredients
Greek Chicken Souvlaki Wrap
- 2 TBSP Greek yogurt
- 1/2 Lemon juiced
- 2 cloves Garlic minced
- 1 TBSP Extra-virgin olive oil
- 1 tsp Dried oregano
- 1 tsp Dried thyme
- 1/2 tsp Paprika
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 8 oz Chicken breast boneless skinless butterflied
- 2 Tortilla wraps
- ½ cup Onion sliced
- ½ cup Tomato sliced
- 1 cup Romaine lettuce shredded
- ½ cup Feta cheese crumbled
Tzatziki Sauce
- 1/2 cup Cucumber rough chopped
- 1/4 cup Greek yogurt
- 1 clove Garlic
- 1 TBSP Fresh dill
- 1/2 TBSP Lemon juice
- Salt
Pita Chips and Hummus
- 4 oz Pita chips
- 1/2 cup Hummus
Kombucha
- 24 oz Kombucha
Instructions
- Prep all ingredients per the instructions above.
- If using wooden skewers, soak in water for 30 minutes.
- In a large bowl, combine Greek yogurt, fresh lemon juice, minced garlic, olive oil, dried oregano, dried thyme, paprika, salt, and pepper. Marinate the the chicken for 10 minutes.
- Make tzatziki sauce: Add the cucumber, yogurt, garlic, olive oil, vinegar, dill, and salt to a blender or food processor. Blend until smooth. Add more salt to taste. Set aside in the refrigerator.
- Preheat the grill or grill pan on medium heat and drizzle with oil.
- Grill the chicken on both sides to an internal temperature of 160°F / 71ºC.
- Spread tzatziki over the wrap.
- Top with chicken, sliced onion, lettuce, tomato, and feta.
- Fold in one end and roll up.
- Serve with pita chips, hummus, and kombucha.
