Ingredients
Cucumber Water
- 1/2 Cucumber sliced
- 24 oz Water
- Ice cubes
For Mac n Cheese
- 4 oz Elbow macaroni
- 6 oz Half and half
- 2 oz Colby jack cheese shredded
- 2 oz White cheddar shredded
- ½ tsp Black pepper
- ½ tsp Smoked paprika
- ½ tsp Salt
- ½ tsp Garlic powder
Garlic Steak Bites
- 8 oz New York strip steak cut into 1 inch cubes
- ½ tsp Onion powder
- ½ tsp Dried oregano
- ½ tsp Salt
- 3 cloves Garlic grated or minced
- 2 TBSP Butter
- Fresh parsley to garnish
Broccolini
- 1 bunch Broccolini
- Salt to taste
Instructions
- Preheat the oven broiler.
- For the cucumber water, place the cucumber slices in a pitcher with water. Let infuse in the refrigerator. Serve over ice if desired.
- For the Pasta: Bring a pot of salted water to a boil. Stir in the macaroni and cook according to the instructions on the package. Then drain.
- Heat the half and half and cheese in a pot over medium low heat. Season with pepper, paprika, salt, and garlic. Whisk until the cheese is melted and the sauce is a smooth creamy consistency. Then place into a baking dish.
- Place under the broiler until the top is nicely browned and crisp.
- Mix the steak with the oil, onion powder, oregano, and salt.
- Melt the butter in a skillet over medium heat. Saute the steak bites and garlic to your preferred temperature (see below). Then remove from the heat and toss with parsley.
- Make the Broccolini: Trim the ends of the broccolini stems. Bring a pot of salted water to a boil. Add the broccolini to the boiling water and cook for 2 - 3 minutes, or until bright green and tender.
- Drain the broccolini and transfer to a plate. Season with a sprinkle of salt.
- Serve the steak over mac n cheese with broccolini and cucumber water.
