Ingredients
Frontega Chicken Panini
- ¼ cup Mayonnaise
- 1 Chipotle chile in adobo finely chopped, plus sauce to taste
- Salt to taste
- Black pepper to taste
- 2 pieces Focaccia bread halved horizontally
- ¼ cup Fresh basil
- 8 oz Rotisserie chicken
- 4 slices Mozzarella cheese
- 1 Tomato sliced
- ½ Red onion thinly sliced
Carrots & Hummus
- 1 cup Carrots peeled and cut into sticks (or baby carrots)
- ½ cup Hummus
Pickle
- 2 Pickle spears
Lemon Sparkling Water with Chia Seeds
- 24 oz Sparkling water cold
- 1 Lemon sliced
- 2 tsp Chia seeds
Instructions
- Prepare all ingredients as listed.
- In a bowl, mix the mayonnaise, chopped chipotle chile, adobo sauce, salt, and black pepper until smooth.
- Spread the chipotle mayonnaise evenly over the bread.
- Layer basil, chicken, mozzarella, tomato, and red onion onto the bread. Season lightly with salt and black pepper, then close the sandwiches.
- Heat a panini press or grill pan over medium heat. Cook the sandwiches until the bread is crisp and golden and the mozzarella is melted.
- Combine sparkling water, lemon slices, and chia seeds. Stir well, let rest briefly, then stir again to prevent clumping.
- Serve the Frontega chicken panini with carrots and hummus, pickle spears, and lemon chia sparkling water.
