Ingredients

Fresh fruit sorbet (use maple syrup)

  • 2 cups Mixed fruit frozen, cut into chunks (e.g., mango, pineapple, or a mix)
  • 2 TBSP Maple syrup
  • 1 TBSP Lemon juice optional, for extra tartness

Strawberry oatmeal breakfast bars

  • ½ cup Rolled oats
  • ¼ cup All-purpose flour
  • tsp Salt
  • tsp Baking soda
  • 2 TBSP Coconut oil or butter melted
  • 2 TBSP Maple syrup

Strawberry filling

  • ½ cup Strawberries fresh chopped
  • ½ tsp Lemon juice
  • ½ tsp Cornstarch

Almond milk

  • 16 oz Almond milk cold

Instructions

  • Preheat oven: Set oven to 350°F (175°C). Line a small loaf pan or mini baking dish with parchment paper.
  • Make the bar base: In a medium bowl, mix the rolled oats, flour, salt, and baking soda. Stir in melted coconut oil and maple syrup until a crumbly dough forms.
  • Form crust: Press ⅔ of the oat mixture into the bottom of the prepared pan to form a crust.
  • Prepare filling: In a small bowl, combine strawberries, lemon juice, and cornstarch. Stir to coat evenly.
  • Assemble bars: Spoon the strawberry filling over the crust. Crumble the remaining oat mixture evenly on top.
  • Bake: Bake for 20–25 minutes or until lightly golden. Let cool in the pan for at least 10 minutes before cutting.
  • Make the sorbet: While the bars are cooling, add frozen fruit, maple syrup, and optional lemon juice to a high-speed blender or food processor. Blend until smooth, scraping down the sides as needed.
  • Serve the strawberry oatmeal breakfast bars with fresh fruit sorbet immediately, and almond milk.
