Preheat oven: Set oven to 350°F (175°C). Line a small loaf pan or mini baking dish with parchment paper.
Make the bar base: In a medium bowl, mix the rolled oats, flour, baking powder, and cinnamon.
In a separate bowl mix the milk, egg, maple syrup, coconut oil, and almond butter.
Mix the dry and wet ingredients until combined. Fold in the strawberries. Then pour into a greased baking pan.
Bake: Bake for 35 minutes until the bars are thickened and golden brown and a toothpick inserted in the center comes out clean. Cool, cut into bars, and serve.
Make the sorbet: While the bars are cooling, add frozen fruit, maple syrup, and optional lemon juice to a high-speed blender or food processor. Blend until smooth, scraping down the sides as needed.
Serve the strawberry oatmeal breakfast bars with fresh fruit sorbet immediately and almond milk.
