Ingredients

Cottage Cheese Toast

Tomato and Onion:

  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 1 Tomato small diced
  • 2 TBSP Red onion chopped
  • ½ tsp Extra-virgin olive oil
  • ¼ tsp Dried oregano
  • Salt to taste
  • Black pepper to taste

Lox:

  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 2 oz Lox smoked salmon, chopped
  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped
  • Salt to taste
  • Black pepper to taste

Fruit

  • 1 cup Mixed fresh fruit e.g. berries, banana, kiwi, washed and prepared as needed

Cacao Honey Maca Root Almond Milk

  • 16 oz Almond milk
  • 1 TBSP Cacao powder
  • 2 tsp Honey
  • 1 tsp Maca root powder

Instructions

  • Prepare all ingredients as listed. Wash and slice the fruit as needed.
  • Toast the bread slices to your preferred crispness.
  • Spread ¼ cup cottage cheese over each slice of toast.
  • Tomato and Onion Toast: Top with diced tomato and chopped onion. Drizzle with olive oil. Season with oregano, salt, and black pepper.
  • Lox Toast: Top with chopped lox, red onion, and dill. Season with salt and black pepper.
  • Make the cacao honey maca almond milk: Stir together almond milk, cacao powder, honey, maca root powder until combined.
  • Serve the toasts with fresh fruit and cacao honey maca root almond milk.
