Ingredients
Cinnamon swirl chocolate chip muffins
- ½ cup All-purpose flour
- ¼ cup Granulated sugar
- ½ tsp Baking powder
- ⅛ tsp Baking soda
- Pinch Salt
- 1 Egg
- ¼ cup Milk your choice
- 2 TBSP Vegetable oil or melted butter
- ¼ tsp Vanilla extract
- 1 TBSP Brown sugar
- ½ tsp Ground cinnamon
- ½ TBSP Butter melted
- ¼ cup Mini chocolate chips
Fresh fruit
- 1 cup Fresh fruit e.g. raspberries, blackberries, sliced banana, washed and prepared as needed
Coffee
- Coffee
- Your choice of creamer
- Your choice of sweetener
Instructions
- Prepare all ingredients as listed.
- Preheat the oven to 350°F (175°C). Line or lightly grease the wells of a muffin pan.
- In a medium bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together egg, milk, oil or melted butter, and vanilla extract. Pour wet ingredients into dry and stir just until combined. Fold in mini chocolate chips.
- In a small bowl, mix brown sugar, ground cinnamon, and melted butter to create the cinnamon swirl.
- Spoon muffin batter into the prepared muffin cups. Add a small spoonful of cinnamon swirl mixture on top of each and gently swirl with a knife or spoon.
- Bake muffins for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
- While muffins bake, brew coffee using your preferred method.
- Serve muffins warm with a side of fresh fruit. Pour coffee into cups and add creamer and sweetener if desired. Enjoy!
