Prepare all ingredients as listed.
Preheat the oven to 350°F (175°C). Line or lightly grease the wells of a muffin pan.
In a medium bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together egg, milk, oil or melted butter, and vanilla extract. Pour wet ingredients into dry and stir just until combined. Fold in mini chocolate chips.
In a small bowl, mix brown sugar, ground cinnamon, and melted butter to create the cinnamon swirl.
Spoon muffin batter into the prepared muffin cups. Add a small spoonful of cinnamon swirl mixture on top of each and gently swirl with a knife or spoon.
Bake muffins for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
While muffins bake, brew coffee using your preferred method.
Serve muffins warm with a side of fresh fruit. Pour coffee into cups and add creamer and sweetener if desired. Enjoy!
