Ingredients

Mediterranean Chicken Salad Pita

  • 8 oz Chicken breast boneless skinless
  • Salt to taste
  • Black pepper to taste
  • 1 tsp Dried oregano
  • 2 cups Romaine lettuce shredded
  • 1/4 cup Grape tomatoes halved
  • 1/4 cup Cucumber diced
  • 1/4 cup Red bell pepper diced
  • 2 TBSP Red onion finely chopped
  • 2 TBSP Kalamata olives pitted and chopped
  • 2 TBSP Feta cheese crumbled
  • 2 TBSP Mayonnaise
  • 1 TBSP Lemon juice
  • 1 clove Garlic minced
  • 2 Pita bread
  • 1 cup Carrot peeled and cut into 3 inch-long sticks
  • ½ cup Hummus

Sweet Iced Tea

  • 24 oz Sweet tea

Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • Season the chicken breast with salt, black pepper, and dried oregano.
  • Grill the chicken on both sides to an internal temperature of 160F / 71C. Once cooked, set aside to cool.
  • Once the chicken has cooled slightly, chop it into bite-sized pieces.
  • In a large mixing bowl, combine the chopped chicken, tomato, cucumber, bell pepper, red onion, Kalamata olives, and crumbled feta cheese.
  • Mix well with mayo and lemon juice until everything is evenly coated.
  • Line the pita with lettuce and top with chicken salad mixture, then fold in half.
  • Serve with carrots and hummus and sweet tea.
