Ingredients
Mediterranean Chicken Salad Pita
- 8 oz Chicken breast boneless skinless
- Salt to taste
- Black pepper to taste
- 1 tsp Dried oregano
- 2 cups Romaine lettuce shredded
- 1/4 cup Grape tomatoes halved
- 1/4 cup Cucumber diced
- 1/4 cup Red bell pepper diced
- 2 TBSP Red onion finely chopped
- 2 TBSP Kalamata olives pitted and chopped
- 2 TBSP Feta cheese crumbled
- 2 TBSP Mayonnaise
- 1 TBSP Lemon juice
- 1 clove Garlic minced
- 2 Pita bread
- 1 cup Carrot peeled and cut into 3 inch-long sticks
- ½ cup Hummus
Sweet Iced Tea
- 24 oz Sweet tea
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Season the chicken breast with salt, black pepper, and dried oregano.
- Grill the chicken on both sides to an internal temperature of 160F / 71C. Once cooked, set aside to cool.
- Once the chicken has cooled slightly, chop it into bite-sized pieces.
- In a large mixing bowl, combine the chopped chicken, tomato, cucumber, bell pepper, red onion, Kalamata olives, and crumbled feta cheese.
- Mix well with mayo and lemon juice until everything is evenly coated.
- Line the pita with lettuce and top with chicken salad mixture, then fold in half.
- Serve with carrots and hummus and sweet tea.
