Ingredients

Chopped Cheese Sandwich

  • 1 tsp Extra-virgin olive oil
  • 1/2 small Yellow Onion finely diced
  • 8 oz Ground beef
  • Salt
  • Black pepper
  • 1/4 tsp Garlic powder
  • 1/4 tsp Paprika
  • 2 Brioche buns
  • 2 slices American cheese
  • 2 slices Cheddar cheese
  • 1 TBSP Mayonnaise
  • 1 TBSP Ketchup (optional)
  • 1 cup Romaine lettuce shredded
  • 4 slices Tomato

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks (or use baby carrots)
  • 1/2 cup Hummus

Mango Lassi

  • 1 cup Frozen mango chopped
  • 1/4 cup Plain yogurt
  • 3 cups Milk
  • 1 TBSP Maple syrup or to taste
  • 1/4 tsp Ground cardamom

Instructions

  • Heat the oil in a skillet over medium heat.
  • Add the diced onions and sauté for 2–3 minutes, until softened and lightly golden.
  • Add the ground beef to the skillet, breaking it up with a spatula. Season with salt, black pepper, garlic powder, and paprika. Cook the beef, stirring occasionally, until fully browned.
  • Lightly toast the rolls under a broiler or in a toaster oven.
  • Once the beef is cooked through, portion it into piles in the skillet, roughly the size of your rolls.
  • Place the cheese over each pile and let it melt.
  • Use a spatula to chop the cheese into the meat, mixing slightly, then scoop each portion onto a toasted roll.
  • Spread mayonnaise on the top halves of the rolls.
  • Top the beef with shredded lettuce, tomato slices, and ketchup if desired.
  • For the mango lassi, combine mango, yogurt, milk, cardamom, and sugar in a blender. Blend until smooth and creamy. Taste and adjust sweetness as needed.
  • Serve the chopped cheese sandwiches with carrots and hummus and mango lassi.
