Ingredients
Chopped Cheese Sandwich
- 1 tsp Extra-virgin olive oil
- 1/2 small Yellow Onion finely diced
- 8 oz Ground beef
- Salt
- Black pepper
- 1/4 tsp Garlic powder
- 1/4 tsp Paprika
- 2 Brioche buns
- 2 slices American cheese
- 2 slices Cheddar cheese
- 1 TBSP Mayonnaise
- 1 TBSP Ketchup (optional)
- 1 cup Romaine lettuce shredded
- 4 slices Tomato
Carrots and Hummus
- 1 cup Carrots peeled and cut into sticks (or use baby carrots)
- 1/2 cup Hummus
Mango Lassi
- 1 cup Frozen mango chopped
- 1/4 cup Plain yogurt
- 3 cups Milk
- 1 TBSP Maple syrup or to taste
- 1/4 tsp Ground cardamom
Instructions
- Heat the oil in a skillet over medium heat.
- Add the diced onions and sauté for 2–3 minutes, until softened and lightly golden.
- Add the ground beef to the skillet, breaking it up with a spatula. Season with salt, black pepper, garlic powder, and paprika. Cook the beef, stirring occasionally, until fully browned.
- Lightly toast the rolls under a broiler or in a toaster oven.
- Once the beef is cooked through, portion it into piles in the skillet, roughly the size of your rolls.
- Place the cheese over each pile and let it melt.
- Use a spatula to chop the cheese into the meat, mixing slightly, then scoop each portion onto a toasted roll.
- Spread mayonnaise on the top halves of the rolls.
- Top the beef with shredded lettuce, tomato slices, and ketchup if desired.
- For the mango lassi, combine mango, yogurt, milk, cardamom, and sugar in a blender. Blend until smooth and creamy. Taste and adjust sweetness as needed.
- Serve the chopped cheese sandwiches with carrots and hummus and mango lassi.
