Ingredients
1/2 Bagel with Veggie Cream Cheese
- 1 Your choice of bagel sliced in half
- 4 TBSP Vegetable cream cheese
Chili Oil Scrambled Eggs
- 1 TBSP Chinese chili oil
- 1 tsp Red pepper flakes
- 1 TBSP Butter
- 4 Eggs beaten
- Salt to taste
- Black pepper to taste
Fruit
- 1 cup Fresh fruit e.g. mango chunks banana or blueberries
OJ
- 16 oz Orange juice cold
Instructions
- Prepare the ingredients as listed.
- Toast the bagel halves in a toaster. Spread vegetable cream cheese evenly over each half and place on serving plates.
- In a non-stick skillet over medium-low heat, add half the Chinese chili oil and the red pepper flakes. Swirl to coat the pan.
- Add butter. Once melted, pour in the beaten eggs. Gently scramble with a spatula until just set, about 1–2 minutes. Remove from heat.
- Serve the scrambled eggs and drizzle with the remaining chili oil, with toasted bagel, fresh fruit, and orange juice.
