Ingredients

1/2 Bagel with Veggie Cream Cheese

  • 1 Your choice of bagel sliced in half
  • 4 TBSP Vegetable cream cheese

Chili Oil Scrambled Eggs

  • 1 TBSP Chinese chili oil
  • 1 tsp Red pepper flakes
  • 1 TBSP Butter
  • 4 Eggs beaten
  • Salt to taste
  • Black pepper to taste

Fruit

  • 1 cup Fresh fruit e.g. mango chunks banana or blueberries

OJ

  • 16 oz Orange juice cold

Instructions

  • Prepare the ingredients as listed.
  • Toast the bagel halves in a toaster. Spread vegetable cream cheese evenly over each half and place on serving plates.
  • In a non-stick skillet over medium-low heat, add half the Chinese chili oil and the red pepper flakes. Swirl to coat the pan.
  • Add butter. Once melted, pour in the beaten eggs. Gently scramble with a spatula until just set, about 1–2 minutes. Remove from heat.
  • Serve the scrambled eggs and drizzle with the remaining chili oil, with toasted bagel, fresh fruit, and orange juice.
