Ingredients
Chili Beef
- 2 TBSP Sriracha sauce
- 1 TBSP Sweet chili sauce
- 1 TBSP Honey
- 1 TBSP Reduced-sodium soy sauce
- 1 TBSP Rice wine vinegar or mirin
- 1/2 TBSP Vegetable oil
- 1 Shallot finely chopped
- 1 clove Garlic finely chopped
- 4 tsp Fresh ginger finely chopped
- 8 oz Ground beef
- Salt to taste
- 1 Red chili pepper thinly sliced and de-seeded for less heat if desired.
Dan Dan Noodles
- 6 oz Udon noodles
- 1 TBSP Sesame seeds plus more for garnishing
- 1 clove Garlic finely chopped
- 1 TSP Red pepper flakes
- 1 TBSP Vegetable oil
- 2 TBSP Reduced-sodium soy sauce
- 1 TBSP Rice wine vinegar
- 1 TBSP Peanut butter
- 1/2 TBSP Honey
- 3 Scallions thinly sliced
- 2 Fortune cookies
Broccolini
- 1 bunch Broccolini
- Salt to taste
Coconut Water
- 24 oz Coconut water cold
Instructions
- Chili Sauce: In a small bowl, combine sriracha, sweet chili sauce, honey, soy sauce, and rice wine vinegar. Mix well to combine. Set aside.
- Chili Beef: Heat the oil in a skillet over medium heat. Add finely chopped shallot, garlic, and ginger to the skillet. Sauté until fragrant, about 1 - 2 minutes.
- Add lean ground beef and the sliced chilis for the beef to the skillet. Cook, breaking up the meat with a spoon, until browned and cooked through, about 5 - 7 minutes. Add salt to taste. Drain any excess fat if necessary. Add chili sauce to the beef. Stir thoroughly and set aside.
- Dan Dan Noodles: Cook noodles according to package instructions until al dente. Save some pasta water (1/4 cup per serving) for making the sauce later. Drain and set aside.
- In a large heat-proof bowl, mix sesame seeds, garlic, and red pepper flakes.
- In the same skillet used for the chili beef, heat the oil over medium heat. Pour the hot oil into the bowl with the sesame seed mixture. Allow the hot oil to toast the sesame seed mixture for a few minutes.
- Once the oil has cooled down a bit, add the soy sauce, rice wine vinegar, peanut butter, and honey to the bowl. Mix well.
- Add reserved noodle water to the sauce to thin it out to a slightly runny consistency. Add the cooked noodles to the bowl. Stir well to combine and coat the noodles evenly with the sauce.
- Add one half to two thirds of the cooked chili beef to the bowl plus half the sliced chilis and scallions and toss to combine.
- Make the Broccolini: Trim the ends of the broccolini stems. Bring a pot of salted water to a boil.
- Add the broccolini to the boiling water and cook for 2 - 3 minutes, or until bright green and tender.
- Drain the broccolini and transfer to a plate. Season with a sprinkle of salt.
- Divide the noodles and beef mixture among serving bowls. Top each serving with a portion of the rest of the cooked chili beef. Garnish with the rest of the sliced chilis and scallions and sprinkle with sesame seeds.
- Serve chili beef dan dan noodles hot with broccolini, fortune cookie, and coconut water.
