Ingredients
Chow Mein
- 4 oz Rice noodles
- 2 TBSP Reduced-sodium soy sauce
- 1 TBSP Oyster sauce
- 1/2 tsp Sesame oil
- 1/4 tsp Sugar
- 1/4 tsp Black pepper
- 2 TBSP Vegetable oil
- 8 oz Chicken breast boneless skinless thinly sliced
- 1/2 Onion thinly sliced
- 1/2 Bell pepper thinly sliced
- 1 cup Carrot julienned
- 1 cup Shredded cabbage mix
- 2 cloves Garlic minced
- 2 Scallions sliced (for garnish)
Steamed Broccolini
- 1 bunch Broccolini
- Water for steaming
- Salt to taste
- Black pepper to taste
Coconut Lime Water
- 24 oz Coconut water
- 2 wedges Lime
Fortune Cookie
- 2 Fortune cookies
Instructions
- Prep the ingredients per the instructions above.
- Cook noodles: Boil noodles in salted water according to package directions. Drain and set aside.
- Make sauce: Mix soy sauce, oyster sauce, sesame oil, sugar, and black pepper in a small bowl. Set aside.
- Cook chicken: Heat vegetable oil in a wok or skillet over high heat. Stir-fry chicken until browned. Remove and set aside.
- Cook vegetables: Add onion, bell pepper, carrots, cabbage, and garlic for 2–3 minutes until crisp-tender.
- Combine: Return chicken to pan. Add sauce, stir-fry 1 minute. Add noodles, toss until combined. Cook chicken to an internal temperature of 165°F (74°C). Garnish with scallions.
- Steam broccolini: Steam broccolini over boiling water for 3–4 minutes until tender-crisp. Season with salt and pepper.
- Prepare drink: Mix coconut water with lime wedges.
- Serve the chow mein with broccolini. Enjoy with coconut lime water and a fortune cookie.
