Ingredients

Chow Mein

  • 4 oz Rice noodles
  • 2 TBSP Reduced-sodium soy sauce
  • 1 TBSP Oyster sauce
  • 1/2 tsp Sesame oil
  • 1/4 tsp Sugar
  • 1/4 tsp Black pepper
  • 2 TBSP Vegetable oil
  • 8 oz Chicken breast boneless skinless thinly sliced
  • 1/2 Onion thinly sliced
  • 1/2 Bell pepper thinly sliced
  • 1 cup Carrot julienned
  • 1 cup Shredded cabbage mix
  • 2 cloves Garlic minced
  • 2 Scallions sliced (for garnish)

Steamed Broccolini

  • 1 bunch Broccolini
  • Water for steaming
  • Salt to taste
  • Black pepper to taste

Coconut Lime Water

  • 24 oz Coconut water
  • 2 wedges Lime

Fortune Cookie

  • 2 Fortune cookies

Instructions

  • Prep the ingredients per the instructions above.
  • Cook noodles: Boil noodles in salted water according to package directions. Drain and set aside.
  • Make sauce: Mix soy sauce, oyster sauce, sesame oil, sugar, and black pepper in a small bowl. Set aside.
  • Cook chicken: Heat vegetable oil in a wok or skillet over high heat. Stir-fry chicken until browned. Remove and set aside.
  • Cook vegetables: Add onion, bell pepper, carrots, cabbage, and garlic for 2–3 minutes until crisp-tender.
  • Combine: Return chicken to pan. Add sauce, stir-fry 1 minute. Add noodles, toss until combined. Cook chicken to an internal temperature of 165°F (74°C). Garnish with scallions.
  • Steam broccolini: Steam broccolini over boiling water for 3–4 minutes until tender-crisp. Season with salt and pepper.
  • Prepare drink: Mix coconut water with lime wedges.
  • Serve the chow mein with broccolini. Enjoy with coconut lime water and a fortune cookie.
